Description
Chicken pot pie is a great comfort food cold weather meal. But I don’t always have the time to make and roll out a pie crust. For this tater tot chicken pot pie casserole, you don’t need any pie crust. You get all of your favorite chicken pot pie flavors without the work of a pie crust. Tater tots are used instead of dough, and they make a delicious alternative.
Ingredients
- 2 Tablespoons Olive Oil
- ½ cups Diced Onion
- 1 cup Diced Carrots
- 2 cloves Garlic, Minced
- 2 cans (15 Oz. Size) Cream Of Chicken Soup
- ½ cups Milk
- 1 bag (10 Oz. Size) Frozen Peas
- 1 pound Cooked Chicken
- ½ teaspoons Salt
- ¼ teaspoons Ground Black Pepper
- 1 bag (30 Oz. Size) Frozen Tater Tots
- 2 cups Shredded Cheddar Cheese
Preparation
Preheat oven to 350ºF. Heat olive oil in a large saucepan over medium heat. Cook onions, carrots and minced garlic until vegetables are softened.
Mix in soup, milk, frozen peas and cooked chicken. Cook until heated through. Season with salt and pepper. Pour mixture out into a greased baking dish.
Top with frozen tater tots. Bake for 30 minutes. Top with shredded cheddar cheese and bake for another 15–20 minutes.
