Description
This is a great meal for breakfast, lunch or dinner.
Need some meat? Add some ham or bacon. This is easy and tastes great.
Ingredients
- 2 cups Tater Tots
- 2 Tablespoons Vegetable Oil
- 1 whole Onion, Chopped
- 1 whole Green Pepper, Chopped
- 1 cup Mushrooms, Chopped
- 4 whole Eggs, Beaten
- 1 cup Shredded Cheddar Cheese
Preparation
Bake tater tots in oven as directed by package. When they are done, remove them from the oven but keep the oven at the same temperature.
Heat a cast iron skillet over medium heat with the veggie oil. Once the oil is hot, toss in onions, peppers and mushrooms. Cook until veggies are slightly soft.
Then toss in the cooked tater tots and mix to combine everything. Then, pour in eggs and top with cheese.
Throw the cast iron skillet in in the oven for 15 minutes. Carefully remove from the oven and enjoy!
