Ingredients
- 1 whole Pie Crust, Your Favorite Recipe Or Premade
- 2 whole Fresh Eggs
- ½ teaspoons Fresh Ground Pepper
- ½ teaspoons Kosher Salt
- 1 Tablespoon Heavy Cream
- 1 teaspoon Parsley
- 9 Tablespoons Shredded Cheese (e.g. Cheddar, Swiss, Etc)
Preparation
Preheat oven to 425ºF.
Roll pie crust out and cut out 6 rounds (approximately 5″ diameter). Line 6 cups of a standard muffin tin with parchment. Mold pie crusts rounds into the parchment cups to form the crust. Bake in the oven for 8-10 minutes or until golden.
Mix eggs, ground pepper, salt, heavy cream and parsley. Remove baked pie shells from the oven, place approximately 1 tablespoon cheese at the bottom of each shell, pour in the egg mixture, then top with a sprinkle of remaining cheese.
Bake for another 8-10 minutes until firm.
