Description
A mild fresh salsa with corn and beans.
Ingredients
- 6 cups Chopped Tomatoes
- 1 clove Garlic, Minced
- 1 can (15 Oz. Size) Black Beans, Rinsed
- 1 can (15 Oz. Size) Kernel Corn, Drained
- 1 whole Lime, Squeezed For Juice
- 1 whole Small Onion, Chopped
- 1 whole Green Pepper, Chopped
- 1 Tablespoon Dried Cilantro (or More, If Fresh)
- 2 whole Jalapeno Peppers, Minced (optional)
- FOR THE DRESSING:
- ½ cups Zesty Italian Dressing
- 1 Tablespoon Salt
- ¼ cups Sugar
Preparation
Stir together the dressing ingredients and pour over all the chopped veggies. Stir everything together and let sit 2 hours.
Doesn’t keep long in the fridge, only 1-2 days.
To replace the zesty Italian dressing and fresh jalapenos, I add 1 cup pickled jalapenos and juice. (See my Pickled Jalapenos recipe in my recipe box.)
