Description

A Southern appetizer that is a crowd pleaser or even part of a great breakfast.

Ingredients

  • 4 cups Shredded Cheddar Cheese
  • 8 ounces, weight Jar Of Pimentos, Drained
  • 15 ounces, weight Can Of Chopped Or Sliced Black Olives
  • 15 ounces, weight Can Of Diced Green Chilies
  • 4 cups Shredded Monterey Jack Cheese
  • 8  Eggs, Beaten
  • Salt And Pepper, to taste
  • Butter, For Greasing Your Pan

Preparation

Preheat oven to 350 F. Grease a 9×13 pan with butter, then spread cheddar cheese on the bottom of dish. Evenly spread pimentos, black olives and green chilies over cheese. Spread Monterey jack cheese over the top. Pour beaten eggs over the whole dish and shake and tilt the dish making sure the eggs cover every layer. Sprinkle with salt and pepper to taste.

Place in preheated oven for 30 minutes or until golden brown. Then remove it from the oven and let it cool for about 10 minutes to make sure it’s set. Cut into squares and serve. On its own it’s a great appetizer or makes a great breakfast with some bacon and biscuits on the side.
