Gluten-free and dairy-free Thai Green Chicken Curry.
Ingredients
- Olive Oil, As Needed
- 500 grams Chicken Breast, Diced
- 1 Onion, Diced
- 2 cloves Garlic, Minced
- 1 teaspoon Ground Ginger
- 2 teaspoons Lemon Juice
- 1 teaspoon Ground Lemongrass
- Salt And Pepper, For Seasoning
- 3 Tablespoons Green Thai Curry Paste
- 400 milliliters Coconut Milk
- 250 grams Rice, Cooked
Preparation
Heat a drizzle of olive oil in a large pan over medium heat. Add chicken pieces and cook for 5 minutes. Add onion and cook for another 5–6 minutes.
Add garlic, ginger, lemon juice, lemongrass and season. Stir in curry paste. Pour in coconut milk and bring to a simmer. Simmer for 5 minutes.
Serve with cooked rice.
