Ingredients
- ⅔ cups Cup Earth Balance Vegan Butter Sticks, Softened (or Coconut Oil, Or Regular Butter If Not Vegan)
- ⅔ cups Brown Sugar
- ⅔ cups Sugar
- ½ cups Almond Milk
- 2 teaspoons Vanilla
- 3-¼ cups Whole Wheat Pastry Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- ½ teaspoons Salt
- 10 ounces, weight Chopped Dark Chocolate (or Chocolate Chips)
Preparation
Cream softened butter with sugars until light and fluffy. Mix in almond milk and vanilla.
Add flour, baking powder, baking soda, and salt. Mix until combined; dough will be soft. Fold in chopped chocolate. Refrigerate dough 20 minutes.
Preheat oven to 350°F. Drop dough into rounded tablespoons on prepared cookie sheet. Bake 10–12 minutes. Remove from oven and cool 5 minutes on baking sheet before transferring to cooling rack.
