The Making of Bruschetta

Description

An Italian appetizer made of fresh toasted bread topped with fresh tomatoes, basil and Parmesan cheese.

Ingredients

  • ½ whole French Baguette (173 Grams)
  • 1 Tablespoon Olive Oil, Plus 1 Teaspoon, Divided
  • 1 clove Garlic
  • 3 whole Plum Tomatoes, Seeded, Diced
  • 10 whole Basil Leaves, Sliced Thin
  • Salt And Pepper, to taste
  • 1 Tablespoon Parmesan Cheese
  • Balsamic Glaze, For Drizzling (optional)

Preparation

Preheat broil to high and line a baking sheet with parchment paper.

Cut baguette on a slight diagonal about 1/4″ thick. Place bread on parchment paper. Place 1 tablespoon of olive oil in a bowl and, with a pastry brush, brush each slice of bread on one side only. Take the garlic and rub it onto the bread. This will give the bread a slight garlicky taste. Place bread under the broiler for 2 minutes until lightly crisp.

Meanwhile, add diced tomatoes and basil to a bowl and drizzle with remaining 1 teaspoon of olive oil. Mix together, season with salt and pepper to taste.

Add tomato mixture to the top of bread and sprinkle with Parmesan cheese. If desired, top with a slight drizzle of balsamic glaze.

Serve and enjoy.
