Description

I just love breakfast. A huge breakfast on the weekend mornings is always nice. I’ll even make the ever popular brinner (breakfast for dinner) every once in a while. This breakfast sandwich is sure to please your morning-time (or anytime) tastebuds: eggs in a nest meets grilled cheese plus bacon for added yumminess!

Ingredients

  • 2 slices Bread
  • 2 whole Eggs
  • 2 Tablespoons Butter, Or More As Desired
  • 1 slice American Cheese
  • 2 slices Cooked Bacon

Preparation

Generously spray a medium-sized pan with cooking spray, then put the pan on the stove over medium-low heat.

Cook the bacon in the microwave, until crispy. Place the bacon on a plate, and cook for 3 minutes, flipping the pieces half-way through.

Cut a hole in each slice of bread. To do this, I used a cup as a “cookie cutter.” Firmly press the cup down in the center of the slice of bread and press to cut out a hole. Only do one slice at a time.

Butter one side of each slice of bread. Place both slices, butter-side down, into the heated pan. After a few minutes (once browned to your liking), flip the slices over to brown the other side.

Once the pan is nice and warm (this is important, making sure the pan is pretty warm will help the egg-whites to stay in one place instead of running all over the pan) crack each of the eggs, being careful not to break the yoke, cracking one egg into each one of the holes in the bread (I like to crack the egg into a bowl first and pour it into the hole). Allow the eggs to cook for a few minutes until the bottom side is solidified a bit. Carefully flip over each slice of bread.

Layer the cheese and the bacon on one of the slices.

After the eggs have cooked for a few minutes (I like my egg yolks runny, so if you want them to be more cooked, leave them on for a few additional minutes) and the cheese has melted, put the two halves of your breakfast sandwich together and serve!

This sandwich is great! It has all the makings of a wonderful breakfast all in one; cheese, meat, eggs, and toast. Serve this sandwich with orange or apple juice and you’ve got yourself a sure winner!
