A perfect breakfast for two. Savory and filling.
Ingredients
- FOR THE WAFFLES:
- 1 cup Pancake/Waffle Mix
- Additional Required Ingredients Specified On Pancake Mix Box
- ¼ cups Finely Diced Bell Pepper
- ¼ cups Canadian Bacon (cooked And Cut Into Small Pieces)
- ½ whole Small Yellow Onion, Diced Finely
- ½ teaspoons Black Pepper
- 2 dashes Your Favorite Hot Sauce
- FOR THE OPTIONAL SCRAMBLED EGGS:
- 2 Tablespoons Sweet Cream Butter
- 3 whole Large Eggs, Beaten
- 1 Tablespoon Half-and-half
- FOR THE CREAM SAUCE:
- 3 Tablespoons Plain Yogurt
- 1 Tablespoon Maple Syrup
Preparation
Preheat oven to 250 F.
In a mixing bowl add waffle mix and any additional ingredients specified on the box (possibly water, oil or egg). Stir and add bell pepper, Canadian bacon pieces, diced onion, pepper and hot sauce and stir gently to mix.
Get your waffle iron hot and pour the appropriate amount of batter inside. Close lid and cook according to manufacturer’s instructions. Remove cooked waffle from waffle iron and place on an oven safe plate. Top with an aluminum foil tent and and put it into the oven. Repeat for the second waffle.
In a frying pan or skillet over medium heat, melt butter. Combine eggs and half-and-half in a bowl and gently beat to combine. Once butter is melted add beaten eggs and cooked until scrambled to your liking. Set aside.
Optional waffle sauce: In a small ramekin or bowl add yogurt and syrup and stir to combine.
Serve waffle with a side of scrambled eggs. Top waffle with syrup or my optional sauce and enjoy!
