The “What, No Egg?” Omelette

Description

The perfect egg-free omelette for vegans, non-vegans who have run out eggs, or chicken owners whose chickens have decided to go for a morning walk. Whatever your situation, this recipe has you covered! Oh yes, and did I mention, it’s even more delicious than the original!

Ingredients

  • 1 cup Chickpea Flour
  • 1 cup Water
  • 1 whole Onion, Chopped Finely
  • 4 whole Padron Peppers Chopped Finely
  • Oil, As Needed
  • ½ teaspoons Garlic Powder
  • 1 teaspoon Baking Powder
  • ¼ teaspoons Turmeric
  • ¼ teaspoons Cumin
  • ¼ teaspoons Paprika
  • ¼ teaspoons Dried Mixed Herbs (optional)
  • Salt And Pepper, to taste

Preparation

Soak chickpea flour and water for 4 hours or overnight.

When ready to cook, lightly cook onions and peppers in a pan with some oil until soft. Add to chickpea batter along with spices and seasonings. Season to taste with salt and pepper.

Add more oil to pan and heat until smoking. Drop a tiny amount of batter into the oil and make sure it sizzles. If it does, you are ready to make the omelette.

Add half the batter to the pan and swirl it around. Cook until bottom is golden and easily releases from the pan. Flip and cook the other side. Repeat with remaining batter.

Enjoy with a delicious salsa of tomatoes or mango.
