Description
This faster-than-10-minutes Tilapia with Olive Relish recipe is a double-duty dinner, which I love. Not only do you get a fast and delicious seafood dinner, but the kids get fish sticks so there’s no whining about the suspicious “green circles with red guts” sprinkled on the fish.
Ingredients
- 2 Tablespoons Safflower Oil
- 4 Tilapia Fillets
- 2 Tablespoons Mayonnaise
- ½ cups Panko
- Salt And Pepper
- FOR THE OLIVE RELISH:
- ¾ cups Pimento Stuffed Green Olives, Sliced
- ¼ cups Chopped Parsley
- ½ Lemon, Zest And Juice
- ¼ teaspoons Dried Oregano
Preparation
Heat oil in 12-inch skillet over medium high heat.
Season fish with salt and pepper. Slice one or two tilapia fillets into fish-stick-sized pieces, coat with mayo and press panko to coat thoroughly.
Put all fish in pan and cook for 5 minutes or until nice and golden brown.
While fish cooks, combine relish ingredients. Flip fish over and cook for 2 minutes until cooked through.
Top fillets with olive relish. Serve fish sticks with ketchup, cocktail sauce or tartar sauce.
