Description
Tomatoes, freshly snipped basil and creamy mozzarella cheese surrounded by a light and puffy egg.
Ingredients
- 1 whole Plum Tomato, Diced
- 5 whole Basil Leaves, Sliced
- 2 whole Eggs Or Egg Substitute
- 2 Tablespoons Milk, Non-fat
- ½ ounces, weight Mozzarella Cheese, Shredded
- 1 dash Ground Pepper
Preparation
Preheat oven to 350ºF.
Spray a 10-ounce ramekin or oven safe baking dish with cooking spray. Add tomatoes and basil into prepared baking dish.
In a small bowl add eggs, milk, cheese and pepper. Stir until combined. Pour egg mixture over tomatoes and basil.
Bake for 30 minutes or until center of eggs is firm.
