Tomato, Spinach and Goat Cheese Stacks

An appetizer recipe that your guests will enjoy as they await the main entree

Ingredients

  • ⅔ cups Balsamic Vinegar
  • 4 Tablespoons Maple Syrup
  • 8 slices French Baguette, About 1 Inch Thick
  • 4 slices Tomato, Halved
  • 4 leaves (large) Spinach, Halved
  • 8 slices Fresh Goat Cheese, About 1/2 Inch Thick

Preparation

Heat balsamic vinegar and maple syrup in a small skillet. Bring to a boil and cook for 2 minutes, until bubbles cover entire surface.

On a large platter, place baguette slices in a row and top with tomato, then spinach and goat cheese. Drizzle balsamic glaze over top of each stack. If glaze gets thick, reheat and add a little more maple syrup.
