A fun, tropical use for one of spring’s best seasonal vegetables: rhubarb!
Ingredients
- 1 cup Frozen Pineapple Tidbits
- 1 cup Fresh Strawberries, Hulled And Halved
- ½ cups Nonfat Plain Greek Yogurt
- 1 whole Medium Carrot, Peeled And Trimmed
- 1 whole Small Stalk Rhubarb
- 2 cups Coconut Milk
Preparation
Combine all ingredients in a blender and blend until smooth.
