Description
When you need an easy, healthy meal, this turkey veggie mix is perfect. The options are endless. The veggies I listed are mere suggestions. I chose those because that’s what I had left over from the farmer’s market one week. Sometimes I add green beans or corn or peas.
Ingredients
- 1 pound Ground Turkey
- 2 Tablespoons Smoked Sweet Paprika, Divided
- Salt And Pepper, to taste
- 2 Tablespoons Garlic, Minced
- 1 cup Chicken Broth, Low-Sodium
- 2 teaspoons Onion Powder
- 2 teaspoons Italian Seasoning
- 2 Small Zucchini, Chopped
- 2 cups Spinach, Chopped
- 6 Mini Sweet Peppers, Diced
- 2 cups Broccoli, Chopped
- ¾ cups Carrots, Shredded
Preparation
In a large saute pan, season the ground turkey with 1 tablespoon of the paprika, salt and pepper. Add garlic and brown the meat until cooked thoroughly.
Once the meat is browned, add half of the chicken broth, onion powder, Italian seasoning and remaining paprika. Stir. Add zucchini, spinach, peppers and remaining broth.
Allow them to cook for 5 minutes covered and add the broccoli and carrots, cover. Once the broccoli is bright green, remove it from the heat. Stir and let it rest covered for 5 minutes. Serve and enjoy!
