Vanilla Pound Cake with Fresh Berries

Description

A light, moist, vanilla flavored pound cake served with fresh berries and a dollop of whipped cream.

Ingredients

  • 3 cups All-purpose Flour
  • ½ teaspoons Salt
  • ½ teaspoons Baking Powder
  • 3 sticks Butter, Softened
  • 2 cups Sugar
  • 5 whole Eggs
  • 1 Tablespoon Vanilla Extract
  • 1 cup Buttermilk Or Whole Milk

Preparation

Preheat oven to 350ºF. Spray 2 loaf pans with cooking spray, set aside.

In a medium bowl, add flour, salt and baking powder; mix until combined.

In a large bowl, beat butter until light and fluffy. Slowly beat in sugar. Add eggs one at a time, waiting until each egg is well incorporated before adding the next. Beat in vanilla extract. On medium speed, alternate adding flour mixture and milk (I did this about 4 times).

Evenly divide batter between loaf pans. Bake in oven for 50–60 minutes or until a toothpick inserted in center of cake comes out clean.
