Vegan Blueberry Waffles

Description

Perfect waffles that just happen to be vegan. Feel free to replace the blueberries with your favorite fruit like chopped strawberries or raspberries. Extra waffles can be kept in the refrigerator or freezer, just reheat under the broiler. The banana is used as an egg replacement so it should not be omitted but they do not have a strong banana flavor.

Ingredients

  • 2 cups All-purpose Flour
  • 1 Tablespoon Baking Powder
  • ¼ teaspoons Salt
  • 1 Tablespoon Sugar
  • 1-¾ cup Plain Soy Milk
  • 1 teaspoon Vanilla Extract
  • 1 whole Banana, Very Ripe And Flecked With Brown
  • 1 Tablespoon Canola Oil
  • 1 cup Frozen Blueberries

Preparation

Mix all dry ingredients together in a large bowl.

Mix wet ingredients with banana, blending well. Add the wet ingredients to the dry ingredients. Stir in the blueberries.

Let the mixture sit for 10 minutes.

Warm a waffle iron and spray with nonstick spray. Pour about 3/4 cup of batter onto the iron for each waffle and close the lid. Check your appliance’s instructions for proper cook time. Alternatively, watch the steam coming from the waffle iron; when it stops steaming, the waffles are done.
