Vegan Crockpot French Onion Soup

Description

Crockpot Classic French Onion Soup! Just like Julia Child used to make, this soup is savory, rich and slightly salty. This version is made entirely in the crockpot with minimal prep work. It’s also totally vegan!

Ingredients

  • 2 Tablespoons Vegan Butter (Earth Balance)
  • 5  Yellow Sweet Onions
  • Salt And Pepper, As Needed
  • 1 teaspoon Sugar
  • 6 cups Vegetable Stock
  • 2  Bay Leaves
  • 1 teaspoon Thyme
  • 1-½ cup Chardonnay Or Pinot Grigio
  • 6 slices Crispy French Bread
  • 6 Tablespoons Red Wine Vinegar Or Sherry
  • 6 slices Follow Your Heart Gouda Or Other Vegan Cheese

Preparation

Add butter and onions to a lightly greased (or better yet, lined) crockpot. Add a generous amount of salt and pepper and the sugar. Cook on low for 8 hours uncovered. The onions should be brown and caramelized. It’s okay if they’re stuck to the pot a little.

Add stock, bay leaves, thyme, and wine. Add a little more salt and pepper to taste here if you want. (I did).
Cook covered on low for 12 more hours or overnight.

Preheat broiler on high. Toast French bread slices.

Ladle the finished soup into serving crocks, finishing with a tablespoon of red wine vinegar. Add the toast, cover with your favorite cheese, and broil until cheese is melted, around 5–10 minutes. Keep an eye on it!
