A wonderful vegan pasta with gorgeous vegetables in an amazing combination.
Ingredients
- 150 grams Mushrooms
- 150 grams Broccoli
- Salt And Black Pepper
- 250 grams Vegan Pasta
- 2 teaspoons Sun-dried Tomato Paste
- 10 grams Roasted Pine Nuts
- 1 bunch Fresh Basil
- 50 grams Cherry Tomatoes
Preparation
Cook mushrooms in a hot pan for about 3 minute. Add broccoli and season well. Cook for another 3 minutes.
Meanwhile, begin boiling the pasta so it will be ready at the same time as the vegetables.
When pasta is ready, add it to the pan with the mushrooms and broccoli. Add sun-dried tomato paste and stir. Cook for 2 minutes.
Serve on the plate sprinkled with roasted pine nuts, fresh basil and some fresh cherry tomatoes.
