Description

Eggs, vegetables and cheese all wrapped up in a flour tortilla!

Ingredients

  • 1 Tablespoon Oil
  • 1 whole Onion, Diced
  • 1 pint White Mushrooms, Sliced
  • Salt And Pepper, to taste
  • 2  Small Zucchini, Diced Or Cubed
  • 1-½ cup Fresh Spinach, Rough Chopped (up To 2 Cups)
  • 1 whole Tomato, Diced
  • 8  Eggs
  • 8  Large Flour Tortillas
  • ½ cups Crumbled Feta Cheese

Preparation

In a medium skillet, heat a little bit of oil and add the onions, stirring occasionally until they are transparent and softened. Add the mushrooms and cook until slightly browned and soft. Season with salt and pepper. Add the zucchini and spinach and cook for 3 or 4 minutes more. For the last minute or two, add the tomatoes.

Meanwhile, cook the eggs in another pan in any way you like. I scrambled mine. Warm tortillas on a flat pan or in the microwave for 30 seconds and pile on some eggs and veggies. Top with a sprinkle of feta and enjoy!

Add any additional veggies to your liking. Red peppers, potatoes, or broccoli would make great additions!
