Description
I was craving something sweet, so I put together some ingredients I had in the kitchen, and the result was delicious. A creamy and tasty cheesecake!
Ingredients
- 15 Vanilla Wafers
- 100 grams Powdered Sugar
- 2 Eggs
- 1 pinch Salt
- 1 Tablespoon Lemon Zest
- 2 Tablespoons Lemon Juice
- 250 grams Mascarpone
- 250 grams Ricotta
Preparation
Preheat oven to 180ºC (355ºF). Line a baking tray with parchment and arrange the wafers on the base. Make sure there are no gaps between the wafers.
In a bowl, add sugar, eggs, salt, lemon zest and juice, mascarpone, and ricotta. Mix well until smooth and creamy.
Pour mixture on top of the wafers and bake for 20 minutes. Refrigerate at least 2 hours before serving.
