Description

I’m obsessed with recipes without sugar, like this whole wheat apple pie. It is really good, healthy, made with whole wheat flour and low in calories. Even my teenage daughter approved.

Ingredients

  • 3 Tablespoons Sultanas
  • 1  Large Egg, Separated
  • Butter, As Needed For Greasing Pan
  • 2  Medium Apples, Peeled, Thinly Sliced, Divided
  • 1-¼ cup Non-dairy Milk
  • 7 ounces, weight Avocado, Mashed (or 2 Tablespoons Sunflower Oil)
  • 5 ounces, weight Whole Wheat Flour, Plus More For Dusting Pan
  • 1  Pear, Peeled, Thinly Sliced
  • 1 teaspoon Ground Cinnamon (optional)
  • 2 teaspoons Baking Powder

Preparation

Place sultanas in a small saucepan, cover with hot water, and soak for 8–10 minutes until soft. Meanwhile, beat egg white until stiff peaks form. Set aside.

Grease a pan with butter and dust with flour, then arrange some of the apple slices all around. Preheat oven to 375ºF.

In a large bowl, mix milk with egg yolk. Add mashed avocado, flour, drained sultanas, remaining apple slices, pear slices, cinnamon, and baking powder. Stir all the ingredients until apples and pears are coated. Fold in whipped egg white.

Pour mixture in the pan and spread all around, covering the apple slices. Bake at 375°F for 35–40 minutes or until browned. Let rest 20 minutes before slicing.
