Start your Christmas morning with a healthy, delicious, festive gingerbread-flavored pancake.
Ingredients
- 1 cup Whole Wheat Flour
- 2 Tablespoons Splenda Brown Sugar
- 1 Tablespoon Baking Powder
- 1 teaspoon Ground Ginger
- 1 teaspoon Ground Cinnamon
- ¼ teaspoons Ground Cloves
- ½ teaspoons Salt
- 1 Tablespoon Ground Flax Seed
- 3 Tablespoons Water
- 1 cup Skim Milk
- 2 Tablespoons No-sugar-added Applesauce
- 1 teaspoon Vanilla Extract
Preparation
In a medium bowl, whisk together whole wheat flour, brown sugar, baking powder, ginger, cinnamon, cloves, and salt.
In a separate bowl, whisk together flax, water, milk, applesauce, and vanilla.
Add milk mixture to flour mixture and stir just until combined. Pour onto a hot griddle using a 1/4 cup scoop. Cook until golden brown on both sides. If desired, use a gingerbread man cookie cutter to create shaped pancakes.
Note: an egg can be used instead of the flax seed and water.
