Description
Light and delicious pancakes made with chunks of tart green apple. Perfect for a healthy St. Patty’s Day!
Ingredients
- 1-¼ cup Whole Wheat Flour
- ½ teaspoons Baking Powder
- ½ teaspoons Salt
- 1 teaspoon Apple Pie Spice
- 1 cup 1% Milk
- 1 whole Egg
- ¼ teaspoons Vanilla
- 1 Tablespoon Brown Sugar
- ½ cups Chopped Granny Smith Apples
- 1 Tablespoon Butter
Preparation
Whisk flour, baking powder, salt and apple pie spice together in a medium size bowl. In another bowl, beat milk, egg, vanilla and brown sugar together. Add the flour mixture to the wet mixture, 1/2 cup at a time. Once fully mixed, add in chopped apples.
Melt butter into a frying pan over medium-high heat. Pour about 1/4 cup of batter into the butter and cook until bubbles form in the batter. Flip and cook another 3 minutes, or until both sides are golden brown. Continue until all pancakes have been made.
Using a shamrock cookie cutter, cut out shamrock shapes. Serve with butter, syrup or caramel and enjoy!
