Description
Fluffy and delicious whole wheat pancakes (vegan too!).
Ingredients
- ½ cups Whole Wheat Flour
- ½ cups Whole Wheat Pastry Flour
- ⅛ cups Evaporated Cane Juice Or Sugar
- 1 pinch Salt
- 1 teaspoon Baking Powder
- 1 teaspoon Vanilla Extract
- 2 teaspoons Canola Oil
- ¾ cups Unsweetened Coconut Milk (like So Delicious Brand)
Preparation
In a large bowl, mix together the flours, sugar, salt, and baking powder. In a smaller bowl, mix together the vanilla, oil, and coconut milk. Pour the wet mixture into the dry and stir until JUST incoporated. If batter is too thick, add a little more milk to thin it out.
Pour batter onto a greased griddle or pan and cook until lightly browned on each side (about 3-4 minutes).
