Whole Wheat Waffles with Warmed Blueberry Topping

Description

A light, crispy, healthy, dairy-free whole wheat waffle topped with simply sweet warmed blueberries.

Ingredients

  • FOR THE WAFFLES:
  • 1-½ cup White Whole Wheat Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoons Salt
  • 1 teaspoon Stevia (double This Amount If You Prefer Regular Sugar)
  • 1 whole Egg
  • 1 cup Unsweetened Coconut Milk Or Milk
  • ½ cups Unsweetened Soy Milk Or Milk
  • ⅓ cups Melted Butter Or Vegetable Oil
  • FOR THE TOPPING:
  • 1 cup Blueberries, Frozen
  • ½ teaspoons Stevia

Preparation

Preheat your waffle iron according to manufacturer’s instructions.

Into a large bowl add flour, baking powder, salt and sugar; whisk until combined.

In a separate bowl, whisk together the egg, milk and butter. Mix the egg mixture into the flour mixture, stirring just until combined. The batter will be a bit lumpy.

Cook the waffles as directed in the instructions that came with your waffle iron.

Meanwhile, in a microwave safe bowl, add blueberries and sprinkle with stevia. Heat for about 1 minute. Remove bowl from the microwave and lightly mash berries with a fork. Return bowl to the microwave and heat for about 20 seconds or until nice and warm. Serve over waffles
