These Zero Carb Egg Muffins are not only healthy and easy to prep, but can be stored in the freezer for up to three months, making it the perfect grab-and-go breakfast meal.
Ingredients
- 8 whole Eggs
- ½ cups Shredded Mozzarella Cheese
- ½ cups Shredded Smoked Salmon
- ½ cups Spinach
- ½ teaspoons Salt
- ½ teaspoons Pepper
Preparation
Preheat oven to 350ºF. Spray muffin tin with nonstick spray.
In a large bowl, mix all ingredients. Pour mixture about halfway full in each muffin tin.
Bake for 25 minutes. To make sure muffins are cooked completely, poke top with a knife—tthere should be no residue on knife when removed.
