Description
Fresh, raw and delicious, zucchini noodles with avocado sauce, spicy chili flakes and two-coloured tomatoes.
Ingredients
- 1 Tablespoon Olive Oil
- ½ teaspoons Salt
- ½ cloves Garlic, Chopped
- 1 pinch Pepper, Freshly Ground
- ½ Lime, Zest And Juice
- 3 teaspoons Pine Nuts
- 1 Zucchini, Sliced Into Noodles
- 1 Avocado
- 4 Tablespoons Water
- Salt And Pepper, to taste
- ¾ ounces, weight Basil Leaves, Fresh
- 1 piece Spring Onion
- 1 teaspoon Chili Flakes
- 6 Cherry Tomatoes, Red And Yellow
Preparation
Mix olive oil, salt, garlic and zest with pine nuts and massage this dressing into the zucchini noodles. Mix avocado with lime juice and water, add salt and freshly ground pepper, and process in a blender to a smooth consistency.
Pour avocado cream on the zucchini noodles, then serve with fresh basil, spring onions, chilli flakes and cherry tomatoes.
