Description
These simple, nutritious pizza bites are great for kids (and kids at heart!).
Ingredients
- 2 whole Zucchini, Sliced
- ⅓ cups Marina Sauce
- 1 teaspoon Garlic Powder
- ⅓ cups Low Fat Mozzarella Cheese, Shredded
Preparation
Preheat oven to 350ºF. Line a baking sheet with parchment paper or use a baking stone.
Place sliced zucchini on baking sheet and top each slice with about 1/2 teaspoon marina sauce. Sprinkle with garlic powder. Top each slice with about 1/2 teaspoon cheese.
Bake for 20 – 25 minutes or until cheese is melted and the thickest slice of zucchini can be easily pierced with a fork. Eat!
Note: I used two small zucchinis, but if you use a large squash you may want to salt the slices for about 20 minutes to remove excess moisture. Then, rinse them, and bake according to the instructions above.
