Description
A chewy energy bar that is both tart and sweet!
Ingredients
- 1-½ cup Cashews
- 1 cup Dates
- ¼ cups Freeze-dried Strawberries
- 1-½ Tablespoon Lemon Juice
Preparation
Line a 9 x 9 pan with parchment paper.
Add cashews to a food processor and pulse until coarse crumbs are formed. Add dates, pulsing until combined. Add strawberries and lemon juice and pulse to combine. Mixture should hold together in a ball at this point. If it doesn’t, add water until a ball can be formed.
Pour mixture into lined pan, pressing it into the corners. Use a spatula to really press down the mixture.
Cut into 12 pieces, and enjoy!
