Sweet & Salty Sunflower Seed Snack

Description

Sunflower seeds and honey combine to make a treat that you can feel good about, unless you eat the whole container. You can bake it for a nuttier flavor, but either way, it is delicious.

Ingredients

  • ¼ cups Honey
  • 2 Tablespoons Brown Sugar
  • 1 cup Sunflower Seeds (without Shells)
  • ½ cups Nutty Nugget Cereal (like Grape-Nuts)
  • 1 Tablespoon Chia Or Flax Seeds (optional)
  • Kosher Salt Or Other Large Crystal Salt For Sprinkling

Preparation

Over medium heat combine honey and brown sugar for a minute or so, just to dissolve the brown sugar. Remove from heat and let cool for 2 minutes. Add the sunflower seeds, nutty nugget cereal and chia or flax seeds if using. Stir to coat completely.

Place foil on a small baking sheet (or other flat surface that can fit into your freezer or fridge) and spray with non-stick cooking spray, or butter the foil. Spread the sunflower mixture onto the pan. Grab a sandwich baggie and spray one side with non-stick cooking spray then wear it like a mitt. Using the baggie “mitt” with cooking spray side on your palm, press the mixture around and flat, to about 1/4 inch deep. Sprinkle some kosher salt over the top for a salty complement to the sweetness.

Place the baking sheet in the freezer and freeze for 30 minutes at least or more. Take it out and immediately break it into pieces. Store it in the refrigerator or freezer for a cool crunchy snack.

OPTIONAL:
Before you sprinkle the salt on, you can bake the mixture in a 350 degree oven for 7-9 minutes to add a toasted nutty flavor. Watch it so that it does not burn. Sprinkle salt on it while it cools, then once completely cool, pop it in the fridge or freezer as discussed above and then continue to follow those directions. This is such an easy and delicious snack that will go fast, so go ahead and make two batches!

You can also experiment and add other ingredients too. Adding a small amount of sunflower butter (or peanut butter) will help to bind the mixture together.
