Spinach Prosciutto Quesadillas

A tasty appetizer or a light snack when you don’t want a heavy meal

Ingredients

  • ½ cups Vegetable Oil
  • 4 Tablespoons Dijon Mustard
  • 2  Whole Wheat Soft Tortilla Shells
  • 1 cup Shredded Mozzarella Cheese
  • 2 cups Spinach, Chopped
  • 3 slices Prosciutto, Diced Thinly
  • ⅓ cups Sweet Green Pepper, Chopped
  • 1 Tablespoon Hot Sauce, Optional

Preparation

Heat a large skillet with vegetable oil on low-medium. Spread 2 tablespoons mustard on 1 tortilla shell. Add 1/4 cup of cheese to half of one side of the tortilla. Add half the spinach, prosciutto and green pepper on top of the cheese, then top with another 1/4 cup cheese.

Press down on ingredients to pack and fold tortilla into a half moon. Add to skillet and cook for 60 to 90 seconds per side or until cheese is melted. Repeat with remaining tortilla shell.
