Healthy Pineapple Coconut Smoothie

Description

Almond milk and fat free yogurt keep the calories down, but make it taste creamy and rich!

Ingredients

  • 1 Tablespoon Shredded Sweetened Coconut, Plus Extra For Garnish
  • 1 cup Fresh Pineapple, Cut Into Pieces
  • 1 container 6 Oz Container, Fat Free Yogurt, Coconut Flavor
  • ½ cups Milk Of Choice, I Use Unsweetened Almond Milk

Preparation

If you want to garnish the smoothie with toasted coconut, spread some (as much as you want on top of your drink) sweetened shredded coconut on a parchment lined baking sheet and bake at 350 F for about 5 minutes, until golden brown. Make sure you watch it so that it doesn’t burn. I do this in a toaster oven. Set aside to cool

Add all of the ingredients above into a blender. Blend on high until smooth. Pour in a tall glass and garnish with toasted coconut, if desired.

Calories for the entire smoothie (if you use almond milk) 214.
