Description

Have you ever had one of these? My, oh my if you haven’t you need to. Little balls of fried chickpeas plus amazing other flavors.

Ingredients

  • 1 can (15 Oz. Size) Garbanzo Beans (Chickpeas), Drained
  • 1 whole Onion, Chopped
  • ½ cups Fresh Parsley
  • 2 cloves Garlic, Chopped
  • 1  Egg
  • 2 teaspoons Ground Cumin
  • 2 teaspoons Ground Coriander
  • 1 teaspoon Salt
  • 1 dash Pepper
  • 1 pinch Cayenne Pepper
  • 1 teaspoon Lemon Juice
  • 1 teaspoon Baking Powder
  • 1 Tablespoon Olive Oil
  • 1 cup Dry Bread Crumbs
  • Oil, For Frying

Preparation

In a large bowl mash chickpeas until thick and pasty. In a food processor, process onion, parsley and garlic until smooth. Stir into the mashed chickpeas.

In a small bowl combine egg, cumin, coriander, salt, pepper, cayenne, lemon juice and baking powder. Stir into the chickpea mixture along with olive oil. Slowly add bread crumbs until mixture is not sticky but will hold together. Add more or less bread crumbs, as needed. Form the mixture into 8 balls.

Heat 1 inch of oil in a large skillet over medium-high heat. Fry balls in hot oil until brown, flipping if needed. Don’t crowd the pan—you can do this in batches if needed. Remove them from the oil with a slotted spoon and place on a paper towel lined plate.

They are the perfect snack, side dish or stuffed into a pita with lettuce, onion, tomato and cucumbers along with some yummy tzatziki sauce.
