Description

This is an easy make ahead appetizer that’s perfect for entertaining!

Ingredients

  • 16 ounces, weight Shredded Sharp Cheddar Cheese
  • 2 jars 2 Oz. Each, Diced Pimientos, Drained
  • 5 Tablespoons Mayonnaise
  • 2 teaspoons Apple Cider Vinegar
  • ¼ teaspoons Cayenne
  • 1 dash Salt
  • 1 dash Pepper
  • 12 slices Bacon
  • 2 loaves Baguette

Preparation

Place cheese, pimientos, mayonnaise, vinegar, and cayenne in a bowl and stir together. Add salt and pepper to taste. This pimiento cheese spread can be refrigerated overnight.

Sprinkle pepper on bacon, put it into a skillet over medium heat and cook until crisp. When done remove bacon onto a paper towel lined plate to drain. When cooled, crumble bacon into small pieces and set aside.

Preheat oven to 400 F.

Slice baguettes into half inch thick slices and lay slices on baking sheets. Spread pimiento cheese mixture onto bread slices and sprinkle with bacon. Bake in the 400 F oven for 3-5 minutes or until cheese is melted.

If you do not use all of the pimiento cheese, it can be saved to have on crackers or to make sandwiches.
