A quick lunch or great appetizer!
Ingredients
- 16 whole Grape Tomatoes, Halved
- 1 whole Green Onion, Chopped
- ⅓ cups Feta, Crumbled
- 1 Tablespoon Olive Oil
- ½ Tablespoons Lemon Juice
- Salt And Pepper, to taste
- 2 whole Avocados
- Parsley, For Garnish
Preparation
In a small bowl, place the tomatoes, green onion, feta cheese, olive oil, lemon juice and salt and pepper to taste. Mix gently.
Halve the avocados and divide the salad among the 4 halves. Garnish with parsley and serve immediately.
