Apricot and Mango Breakfast Bars

Description

Hearty oatmeal bars topped with dried apricot and fresh mango for a quick on the go breakfast. Easily adapted for whatever fruit you have available.

Ingredients

  • 2 cups Oatmeal
  • ½ cups White Flour
  • ½ cups Whole Wheat Flour
  • ¾ cups Firmly Packed Brown Sugar
  • ½ teaspoons Cinnamon
  • ¾ cups Melted Butter
  • 1 cup Dried Apricots, Chopped
  • 1 whole Egg
  • ¼ cups Milk
  • 1 cup Mango, Diced
  • ½ cups Pecans Or Walnuts, Toasted And Chopped (optional)

Preparation

Mix together the first 6 ingredients (oatmeal, both flours, brown sugar, cinnamon and melted butter). Remove 1 firmly packed cup of mixture and put into another bowl. Press the remaining mixture into the bottom of a well greased 9″ square pan.

To the reserved mixture add the remaining ingredients and mix well. Spread on top of the mixture in the pan.

Bake at 350 degrees F (180C) for 35-40 minutes . Cut into squares while still warm.
