Authentic Guacamole

Description

This is a simple, honest guacamole with no fancy ingredients—just pure flavor!

Ingredients

  • 1 whole Roma Tomato
  • 2 slices Sweet Onion (thin Slices, Not Over 1/8″)
  • ¼ whole Jalapeno Pepper
  • 2 whole Ripe Avocado
  • 1 pinch Ancho Chili Powder
  • 1 pinch Salt
  • 1-½ Tablespoon Lime Juice

Preparation

Dice the tomato into petite cubes. Finely chop the onion slices. Select a pepper with a rounded end. This gives you more flavor with less fire. Finely dice the outside flesh only (no seeds or seed bed).

Cut the avocado in half with a sharp knife, removing the pits and any brown areas. Scoop out the flesh, scraping the inside of the skin to get all of the soft green flesh.

Add all of those ingredients into a rounded bowl and smash all pieces of the avacado with a fork. They should be firm, but not resistant. If they are too resistant either your fork is cheap or your avocado is not yet ripe and you are wasting your time.

Add the salt and chili powder and stir the ingredients together. Finally add the lime juice. Fresh juice is fine, but bottled or juice from a “plastic lime” works just as well. Blend ingredients together with a fork adding more lime juice as needed to ensure proper consistency.

It’s ready to eat now. But it will be better if you place it in a small container (less air) and refrigerate it for an hour or so to let the flavors enjoy each other. Then you can really enjoy it!

The exact quantities aren’t nearly as important as using a good ripe avocado, good ripe tomato and good sweet onion.

This is great for a cold snack or appetizer with a nice cold drink or to serve on shredded lettuce for a complete, healty meal. I’ve never failed to receive compliments on this simple recipe.
