Description

Bacon Cheddar Chive Egg Muffins are an easy low carb breakfast recipe that’s quick and easy to make. Great for meal prep!

Ingredients

  • 8  Large Eggs, Beaten
  • 1  Small Red Pepper, Cored And Finely Diced
  • 1  Small Onion, Finely Diced
  • ¼ cups Chopped Chives
  • ⅓ cups Chopped Bacon
  • ⅓ cups Shredded Cheddar Cheese
  • Salt And Pepper, to taste

Preparation

Preheat oven to 375°F and grease a 12-cup muffin pan well.

Mix all ingredients for the egg muffins together in a medium bowl. Evenly divide between the prepared muffin cups.

Bake for 15–18 minutes, or until the egg muffins are firm to the touch and cooked through.
