Bacon Wrapped Tater Tots

Description

I had you at bacon, didn’t I? These are a staple at our house during football season.

Ingredients

  • 16 slices Bacon, The Thinner The Better
  • 32  Pickled Jalapeno Pepper Slices
  • 32  Tater Tots, Defrosted
  • 32  Toothpicks
  • Vegetable Oil, For Frying
  • 1 cup Cheddar Cheese, Shredded

Preparation

Preheat oven to 350ºF.

Begin by cutting bacon slices in half so that you have 32 short pieces.

Place a jalapeno slice at the end of a piece of piece of bacon, top with a tater tot and roll it up. Secure it all together by skewering it completely through with a toothpick. Repeat with remaining tater tots.

Heat oil to about 350ºF in a fryer or deep pan. Fry wrapped tater tots in small batches until bacon is crisped, about 4-5 minutes. Do not overcrowd the pan or they will stick together.

Drain briefly on a paper towel. Place on an oven-proof dish and top with shredded cheese. Place in preheated oven for 5-6 minutes to slightly melt the cheddar cheese.

Serve immediately.
