Banana Pancakes

    Ingredients

    • 1 cup All-purpose Flour
    • 1 Tablespoon Sugar
    • 2 teaspoons Baking Powder
    • ¼ teaspoons Salt
    • ¼ teaspoons (heaping) Cinnamon
    • 1  Egg
    • 1 cup Milk
    • 2  Ripe Bananas, Mashed
    • 2 Tablespoons Vegetable Oil (or Natural Applesauce)
    • ½ teaspoons Vanilla Extract
    • ¼ cups Nuts, Chopped (optional)

    Preparation

    Combine the flour, sugar, baking powder, salt, and cinnamon in a small bowl.

    In a larger bowl, mix together the egg, milk, bananas, vanilla, and oil. Slowly add in the flour mix to the banana mixture; the batter will be lumpy.

    Heat a skillet or griddle over medium heat and spray lightly with nonstick spray. Scoop out 1/4 cup of the batter. Add nuts once one side is almost done. Cook until both sides are golden.
