Full disclosure: there is bacon involved. Bring good luck to your New Year with this yummy hummus!
Ingredients
- 3 strips Bacon
- 1 can 15.5 Oz Can, Black-Eyed Peas, Drained
- 1 Tablespoon Olive Oil
- 2 Tablespoons Tahini
- ¼ teaspoons Coriander
- ¼ teaspoons Salt
- ¼ teaspoons Pepper
- ½ teaspoons Garlic Powder
- 2 teaspoons Onion, (a Few Slices)
- 3 slices Jalapeno
- ¼ cups Cilantro Leaves (about A Handful)
- ½ whole Lime, Juiced
Preparation
Line a microwave safe dish with paper towels, lay your bacon on top and cover with another paper towel. Microwave for 4:30 minutes. Or use your favorite method to make crispy bacon.
Empty the can of drained black eyed peas into a food processor/chopper. Add the olive oil, tahini, coriander, salt, pepper, garlic powder, onion, jalapeno, cilantro, bacon and lime juice. Puree until smooth.
Serve with pita, crackers, veggies, whatever you like! Enjoy!
