Description
This is a great breakfast idea to prepare beforehand and then just heat in the oven for a bit when needed. Great for those mornings when you have several mouths to feed. Could be easily adapted to add sausage or ham into the mix.
Ingredients
- 28 ounces, weight O’Brien Potatoes (frozen Or Refrigerated)
- 1 pound Bacon
- 6 Large Eggs
- 2 cups Milk
- 2 cups Cheddar Cheese, Shredded
Preparation
Spray a 9 x 13 pan with cooking spray. Set aside.
Prepare potatoes according to package directions. While potatoes are cooking, fry bacon in a skillet over medium heat until crisp. Remove bacon from pan to a paper towel-lined plate, cool, then crumble bacon.
When potatoes are complete spread them in the bottom of the prepared 9×13 pan. Set the oven to 350 F if it wasn’t already at that heat level for the potatoes.
In a medium-sized bowl beat the eggs with the milk then pour over the potatoes. Top with cheddar cheese. Scatter bacon crumbles on top of cheese.
Bake uncovered at 350 F for approximately 50-60 minutes. Serve!
