Description
This little veggie appetizer is perfect for a party or on your dinner plate as a side! I have also made them in larger muffin cups. Just add 6-8 more minutes for cooking if you do. The 20 minute cook time is for 2 trays of mini-muffin sized appetizers, cooked at one time. Allow an hour to cook the entire recipe. Recipe makes 6 dozen.
Ingredients
- 2 packages 16 Oz Packages, Frozen Chopped Broccoli, Thawed, Well Drained
- 1 cup French Fried Onion Rings
- 3 cups Grated Sharp Cheddar Cheese
- 6 whole Eggs, Beaten
- 1 cup Italian Bread Crumbs
Preparation
Preheat oven to 375 F.
Drain frozen broccoli well and make sure it is chopped well (no piece should be larger than ¼”). Chop french fried onion rings.
In a large bowl, mix together all ingredients making sure they are well combined.
Spoon into mini-muffin pans, filling to the top of each cup. Bake them one tray at a time, at 375 F for 20 minutes.
