Caramel-coated cereal snack mix you make in the microwave.
Ingredients
- 12 ounces, weight Crispix Cereal
- ¼ cups Light Corn Syrup
- ¾ cups Brown Sugar
- ½ cups Butter
- ¼ teaspoons Salt
- ½ teaspoons Vanilla
- ¼ teaspoons Baking Soda
- Plain Or Peanut M&M Candies (optional)
- Mini Pretzels (optional)
Preparation
This recipe requires 2 clean, new, grocery sacks to cook the snack mix in the microwave.
Double line a clean, new, grocery sack. Put Crispix cereal into grocery sack. It’s best not to dump the box of cereal into the sack to avoid getting all the crumbs and small, broken bits in the snack mix.
Heat corn syrup, brown sugar, butter and salt in a medium saucepan until liquid comes to a boil. When mixture comes to a boil, remove from heat. Add vanilla and baking soda, stir to combine.
Pour hot liquid over cereal. Fold down bag at the top to close it near the level of the cereal, and gently turn/flip/shake bag around to thoroughly mix and coat all cereal pieces.
Place grocery sack in the microwave (high power) for 1 1/2 minutes. It’s probably not going to turn in the microwave because it’s so large. Don’t worry, it will be fine! Without opening the bag, turn/flip/gently shake bag to stir. Microwave for 1 minute. Shake bag. Microwave for 30 seconds. Shake bag. Place caramel cereal on wax paper to cool and discard grocery sacks. Add your favorite candies or pretzels to the Caramel Cereal Mix and store in zip top bags or an airtight container.
Note: Crispix-like cereal seems to hold up best in this recipe. If you choose to substitute a Chex or similar type cereal, I suggest Corn Chex rather than Rice Chex for a hardier cereal.
