Description

Carrot cake in the form of healthy breakfast oatmeal!

Ingredients

  • 1 whole Small Carrot, Grated
  • ⅓ cups Oats
  • ⅓ cups Almond Milk (or Soy, Regular, Etc.)
  • ¼ cups Plain Low-fat Yogurt
  • 2 Tablespoons Light Cream Cheese
  • ¼ teaspoons Cinnamon
  • 1 pinch Nutmeg
  • 1 pinch Ginger

Preparation

Combine all ingredients and mix well. Cover and store in refrigerator overnight.

In the morning, drizzle with maple syrup (if desired). Enjoy for breakfast, no cooking necessary.
