Delicious Cheese Empanadas.
Ingredients
- 4 cups All-Purpose Flour, Plus More For Working The Dough
- 1-½ teaspoon Kosher Salt
- ¼ teaspoons White Sugar
- 1 whole Egg
- 1 Egg Yolk
- 1 cup Water, Plus 1 Tablespoon
- ½ cups Melted Butter
- 4 cups Shredded Monterey Jack Cheese For The Filling
- 2 cups Canola Oil, Or As Needed For Deep Frying
Preparation
Mix all-purpose flour, salt, and white sugar in a large bowl. Make a well in the middle.
Whisk egg, egg yolk, and water. Add egg and water mixture, and melted butter into the well. Mix all ingredients slowly with a fork until everything is well combined.
Knead dough and cut it into 4 balls. Let dough rest for 15 minutes, covered in plastic film.
On a lightly-floured surface, roll out dough. Cut out circles 4 inches (10 cm) in diameter using an empanada press.
Fill each empanada with cheese and press using the empanada press. Deep fry in canola oil.
