Chicken Fingers

Description

A crispy baked chicken finger that tastes like it was fried. These are made with special seasonings and cornflakes which gives them the crunch factor. This dish is super fast and super easy to make and would go great as an appetizer for a party. And kids love them too. Serve them with your favorite sauce like ranch, hot sauce, or honey mustard.

Ingredients

  • 1 whole Egg White
  • 1 Tablespoon Water
  • 1-½ cup Cornflakes Cereal, Crushed
  • 2 teaspoons Parmesan Cheese
  • ¼ teaspoons Italian Seasoning
  • ¼ teaspoons Paprika
  • 1 dash Cayenne Pepper
  • 1 pound Boneless, Skinless Chicken Breasts

Preparation

Preheat oven to 400 F.

Line a baking sheet with parchment paper or aluminum foil and place a cookie rack on top. Spray the rack with cooking spray, set aside

In a shallow bowl combine egg whites and water. Set aside.

In another shallow bowl add Corn Flakes, cheese and seasonings ad stir until combined. Set aside.

Cut chicken breasts horizontally and then cut the halves into strips.

Dredge the chicken in the egg whites, then dip them into the Corn Flake mixture. Place the chicken on the prepared baking rack.

Bake for 18 minutes or until chicken is done.

Serving Size: 2.5 pieces each (I got 10 tenders total).
