To serve after midnight for those partying well into the morning.
Ingredients
- FOR THE HOLLANDAISE CREAM CHEESE:
- 4 ounces, weight Cream Cheese, Softened
- ¼ cups Butter, Melted
- 2-½ Tablespoons Lemon Juice
- ¼ cups Half-and-half
- FOR THE ASSEMBLY:
- 1 whole French Baguette, Sliced Into 1/2″ Slices, Toasted
- 6 slices Thick Cut Canadian Bacon, Quartered
- 4 whole Hard-Boiled Eggs, Peeled And Sliced Into 1/4″ Slices
- Fresh Ground Pepper Or Paprika For Garnish
- Tabasco For Serving, If Desired
Preparation
For the cream cheese: Combine all ingredients in a small blender and pulse until well-mixed and smooth. Set aside.
For the assembly:
Place toasted baguette slices on a serving tray, then layer each with 2 teaspoons of hollandaise cream cheese, two Canadian bacon quarters, one slice of hard-boiled egg, and one additional 1/4 teaspoon of hollandaise cream cheese. Sprinkle each with paprika or fresh ground black pepper. Serve with a side of Tabasco for guests to use if desired.
* For ahead preparation: Prepare all ingredients individually, refrigerate cream cheese mixture (it will need to come to room temperature prior to assembly), Canadian bacon slices and hard-boiled egg slices. Refrigerate. Assemble just prior to serving.
